Comfort Food

It's a bit coolish and VERY foggy out today and I'm feeling the lack of sunshine. What does one do in such a state? Pull out the rubber stamps, put on the tunes and eat some comfort food, of course! Today I have a hankerin' for Impossible Coconut Pie. I grew up with this and it not only brings back memories of childhood, but it tastes soooooo good too! This recipe is beyond easy to make. Simply put all the ingredients into a blender, whirl, pour into a pie dish and bake...VOILA! The cool thing about this pie is that while it bakes it forms the bottom, middle and top layers! This yummy pie is good hot or cold and is equally delicious with a glass of cold milk or nice cuppa tea or coffee.

IMPOSSIBLE COCONUT PIE

In a blender, combine:

2 cups milk
1 cup coconut
4 eggs
1 tsp vanilla
1/2 cup flour
5 tbsp butter
3/4 cup sugar
nutmeg & cinnamon, if desired

Pour into a pie plate and bake at 350' for 60 minutes or until knife inserted comes out clean.
