Christmas Biscotti Gift

Hi Friends! In yesterday’s post I mentioned that I had packaged up some of my homemade Christmas Biscotti to give to a friend and I promised you the recipe, as well as how I packaged it up (in a matter of three minutes because I was short on time!).  Here’s the recipe:

Christmas Biscotti

3 eggs
1/4 cup butter, melted
1 cup sugar
1 tsp anise extract
1 tsp vanilla
Combine above and set aside.

In a separate bowl add:
2 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground cloves

Directions:
Slowly combine wet and dry ingredients together. Stir in 1/2 cup mincemeat and 1/2 cup chopped almonds. You may need to add a bit more flour, but dough will be sticky. Shape into log and place on stoneware baking pan or cookie sheet lined with parchment paper. Bake at 350′ for 30 minutes. Take out of oven and cut into 3/4″ slices (use a bread knife).  Lie each cookie flat side down and bake another 10 minutes, flip and repeat. You’ll need to do this in 2 or 3 batches. Once cookies are cool sprinkle with icing sugar or drizzle with melted chocolate.  Enjoy with a cup of tea or coffee!
These are sooo good and my house smelled amazing while they were baking too!

As I mentioned, I had only a couple of minutes to come up with some cute packaging for the biscotti. Stampin’ Up! has all kinds of fabulous bags, boxes and tags which makes it so easy to create pretty gifts.  I used the Petite Cafe Gift bags (I seriously need to order more of these – they’re great!) as well as the Under the Tree Tag a Bag accessory kit. I also had some embellishments on my desk leftover from other projects. This was the finished gift:
Soooo quick and easy! It really did take about 3 minutes to put together! Gotta love Stampin’ Up!  Our products make gift giving fun and quick too!

PS: I couldn’t resist sharing a photo with you, of Rosey eye-balling the biscotti as I took the photos for today’s post. Cooper was right behind me, also drooling.  Yes, I did give them a teeny weeny bit (without any raisins, which are bad for dogs). Lord knows I don’t need two hounds tearing through the house on a sugar rush, but suffice to say they were pretty pleased.
