Friends! Finding time to stamp right now hasn’t been easy LOL –
vegetables are still keeping me away from my stamps and inks! Green
tomatoes are the culprit at the moment. Brian’s mom just gave us bags
and bags of them (and believe me, I already have TONS of tomatoes in
our garden) – but I couldn’t refuse them!
I usually make green tomato mincemeat – which is delicious – but I still have a jar or two
from last summer. I’m going to use it up this year and next year I’ll
make more. If you have never tried green tomato mincemeat and want to, here is a recipe similar to the one I make: green tomato mincemeat. I always add a bit of brandy and other good stuff when I make it. Yeesh – now I’m thinking I SHOULD make more this year! LOL There’s also a green tomato curry sauce that is insanely good,
so I’m going to make more of that. I already have lots ofchow-chow– don’t
need any more! So I am going to try making Green Tomato Jam and
I’ll let you know how they turn out. My concern at the
moment is that I am running out of jars, lids and rings and I already know
canning jars are completely out of stock in town – finding lids could
be a challenge too (amazon prices are skyhigh right now too). On that
note, I’m skiddadling into town to stock up on a few things and look
for what I need to preserve all these veggies! However, I do have a wonderful
tutorial to share with you today though – courtesy of Sherry Roth, from our
Leaders Project Sheet group!
